Weeknight Dinner Repeats

During the fall months, it seems like dinner needs to be quick to make and take even less time to eat. The boys have football every night from 5:30-7:30. That leaves us about 15 minutes to eat.

These are a few of my go-to dinner ideas that we have on repeat.

I will say that as much as I love a home cooked meal, I'm all about easy this time of year.
I love to grab a few options from Trader Joe's to throw in the grill.
We have taco Tuesday at our house and I've grabbed both of these options, grilled them, then put them in corn tortillas with toppings. My family has liked both.

Trader Joe's Pollo Asado Autentico

This is their favorite of the two. I dice the meat up and my littles will just eat the meat.

Carne Asada Autentica
I will also just grill some chicken, make mini potatoes, and green beans. Everyone eats with very little complaining.

My kids love Fettuccine Alfredo. I grill some chicken and it's so easy!

Crockpot Ranch Chicken over noodles.
  • 2 pounds chicken breast
  • packet of ranch seasoning mix
  • 8 ounces of cream cheese
  • 8 slices of bacon, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese
  • sliced green onions (I left this off since my family won't eat them)
Put the chicken breasts, ranch, and cream cheese in the crockpot and cook on low for 7 hours. add the cheese about 30 minutes before you want to eat. Add the bacon and green onions when you serve.

Ashley shared a crockpot meal planner and I've tried several of the recipes and loved them! I like that I can put them in before I put the kids on bus and it's ready when it's time for dinner!

Shredded Beef Fajitas

A couple more we've tried from Ashley and enjoyed...
Chicken French Dip Sandwiches
Beef and Broccoli Teriyaki served over rice
BBQ Chicken Sandwiches

Hopefully this will give you some ideas for your busy season of life!
