Easy Beef Enchiladas

Happy Monday, friends! I hope you've all had a great weekend with you families. We had a good weekend. They kids played outside 98% of the weekend and they were extra tired last night.

We're back to regular scheduled programming this morning. Colson is already working hard at schoolwork. We're trying something new this week, only going four days. Who wants to go to school on Fridays? Not us!

Today I'm sharing one of our favorite easy recipes. It's straight off the back of the McCormick enchilada packet.

Here's what you'll need: 
(I doubled this recipe but I'll share what you'll need for one serving)

1 package of McCormick sauce mix
1 1/2 cups water
1 8oz can of tomato sauce
1 pound of ground beef
8 flour tortillas
1 cup shredded cheese


Set 1: Stir you sauce packet, water and tomato sauce in a saucepan and bring to a boil. Reduce the heat and simmer for 5 minutes. It will thicken up.

Preheat oven to 350 degrees.


Brown your meat.


Stir in 1/2 cup of the sauce into your meat.


Here's my assembly line. I don't like the mess, so I do whatever I can to make this process as clean as possible. I don't dip my tortilla shell into the sauce before filling them, but you can. I pour a thin layer of sauce into the bottom of my pan.


Then, I put a generous spoonful of meat and top with cheese. I roll it up and place it in my pan. 


Once my pan is full, I pour over the rest of the sauce on top and sprinkle with cheese.
Bake in for 15 minutes!
